Look at me ROLL!!!! Today was my first day in my chair, and I felt very proud of myself. It was definitely exhausting, but they say I will get much stronger. Tomorrow I will be hooked up to a machine to see if I get a spontaneous contraction in my quads which would put me on the PT fast track... Everybody say a prayer at 2pm!! great day today, 10-11-12 sarah gets hooked up to a machine to see if she has spontaneous contraction in her quads. when she does, that will put her on the fast track to physical therapy. SARAH GIVE US SOME SPONTANEOUS CONTRACTIONS. please keep this in your thoughts today, test is at 2pm. WGT

of our glorious Thanksgiving feasts, a bountiful harvest

Stanley Tucci's Tropiano Ragù Sauce
Print Recipe 

INGREDIENTS:
From "The Tucci Cookbook," by Stanley Tucci
Serves 8

¼ Cup Olive Oil
½ lb Stewing Beef (trimmed of fat, rinsed, patted dry, and cut into pieces)
½ lb Pork Chops or Spareribs (trimmed of fat, rinsed and patted dry)
2 Cloves Garlic (finely chopped)
1 T Onions (finely chopped)
½ C Dry Red Wine
3 ½ C Canned Whole Plum Tomatoes (about one 28-ounce can, pureed in a blender or a food mill)
1 Fresh Basil Leaf
Kosher Salt and Freshly Ground Black Pepper

DIRECTIONS:


  • Warm the olive oil in a medium-size flameproof casserole set over a medium-low heat. Add the stewing beef and brown evenly on all sides, about 10 minutes. Remove the beef to a bowl and set aside.



  • Add the pork to the pot and brown evenly on both sides, about 10 minutes. Remove the pork to a bowl and set aside.



  • Stir the garlic and onions into the pot and cook until softened but not browned, about 2 minutes. Add the wine and stir to loosen any bits of meat that may have stuck to the bottom of the pan. Stir in the tomatoes and basil. Return the meat to the pot, along with any juices that have accumulated in the bottom of the bowl. Season with salt and pepper. Bring to a boil, then cover, reduce the heat to medium-low, and simmer until the tomatoes have sweetened and the meat is very tender, about 1 ½ hours.
