    Update from our beautiful family member Sarah

    I rolled over for the first time all by myself today! That sounds like such a minor thing to me, but trying it is such a different story now. I begin on my back, bed my top leg and have to swing my arms and body from side to side three times to gain momentum till I am on my side. I have done it before with assistance, but today I felt amazing being able to it all on my own! I ROCK... NOW I ROLL!!!

    It's Halloween Dressup for Sarah


    Our beautiful family member Sarah updated yesterday.............



    Today was a beautiful day... It all began last night when Sean arrived a day early! I was beside myself, and the kisses never felt soooo good. Sean went to all my classes with me, as did his parents, who have been here all week and will sadly be leaving tomorrow morning. My nurses tell me how rare it is for the parents of a boyfriend/girlfriend to visit, giving me yet another thing to be grateful for.
    I began with Occupational Therapy, and Sean and I played volleyball with a balloon. This was difficult for me, but great for my balance and coordination... I also had a huge smile on my face the entire time, loving doing that with Sean. Next was the bike -my fav. I love watching and feeling my muscles fire! Finally was Physical Therapy. My PT, Chuck, taught Sean how to maneuver my wheelchair around different obstacles.... Which all led to my ability to go off campus!!! We went on a date tonight - complete with Sean showing up at my door with flowers. Yes, he is THE BEST! I love him so much and am incredibly grateful and in awe of his love for me. We are now off to sleep. I'm in my bed and Sean dragged the mattress from the couch bed in my room to the floor next to my bed. Sweet dreams everyone!

    Neiman Marcus Cookie Recipe



    Sarah's therapy yesterday was to bake cookies
    She said stirring the dough strengthens her arms...........
    How wonderful..........
    I am not sure what kind of cookies Sarah made
    but below are a couple of cookie recipes
    to share.

    Hungarian Kifli Cookies

    Ingredients

    Dough
    4 3/4cupsflour, all-purposeunsifted
    2cupsbutterVideoor margarine
    4largeegg yolksslightly beaten
    1cupsour cream
    Filling
    5cupswalnutsshelled, ground
    1cupsugarVideogranulated
    1/2cupmilkVideo
    1tablespoonalmond extract*
    Glaze
    1largeeggVideobeaten
    1xpowdered sugarVideo*
    * not incl. in nutrient facts

    Directions

    Make dough: in a large bowl, place the flour and the butter.
    Using a pastry blender or two knives, cut the butter into the flour until the mixture resembles coarse crumbs.
    Add the egg yolks and sour cream; stir with a fork until combined.
    Turn the dough out onto a lightly floured board or pastry cloth. Knead the dough with your hands until it is smooth and can be shaped into a ball. If dough is too sticky, knead in more flour.
    If desired, wrap dough in plastic wrap and refrigerate.
    Make filling: In a medium-sized bowl, place the ground walnuts, granulated sugar, milk and almond extract.
    Using a wooden spoon, stir in walnut mixture until ingredients are thoroughly combined.
    Prehead oven to 400F.
    Grease baking sheets with solid vegetable shortening.
    To shape Kifli: divide the dough into quarters; wrap three of the quarters separately in plastic wrap and set aside.
    On a lightly floured surface, roll out the remaining quarter of the dough to a 15 x 12 inch rectangle that is 1/8 inch thick.
    Using a pastry wheel, cut the rectangle of dough into 3-inch squares.
    Place a heaping teaspoon of the walnut filling in the center of each square; bring one corner of the dough over the filling to the opposite corner; pinch edges together.
    Place Kifli on baking sheets; brush with the beaten egg.
    Bake for 10 minutes or until cookies are golden brown. Remove from the baking sheet.
    Fill the bottom of a pie plata with confectioners' sugar. Roll Kifli in the sugar.
    Let cool on wire racks. Repeat steps with the remaining three quarters of dough.

    Neiman Marcus Cookie Recipe

    (Recipe may be halved):
    2 cups butter
    4 cups flour
    2 tsp. baking soda
    2 cups granulated sugar
    2 cups brown sugar
    5 cups blended oatmeal (measure oatmeal and blend in blender to a fine powder)
    24 oz. chocolate chips
    1 tsp. salt
    1 8 oz. Hershey bar (grated)
    4 eggs
    2 tsp. baking powder
    3 cups chopped nuts (your choice)
    2 tsp. vanilla 
    Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey bar and nuts. Roll into balls and place two inches apart on a cookie sheet..Bake for 10 minutes at 375 degrees. Makes 112 cookies.. Have Fun!!!

    Life is Like a Train Ride:



    Life is like a train ride. We get on. We ride. We get off. We get back on and ride some more. There are accidents and there are delays. At certain stops, there are surprises. Some of these will translate into great moments of joy; some will result in profound sorrow.
    When we are born and we first board the train, we meet people whom we think will be with us for the entire journey. Those people are our parents! They too have journeys they must complete. We live with the memories of their love, affection, friendship, guidance, and their ever presence.
    There are others who board the train and who eventually become very important to us. These people are our brothers, sisters, friends, and acquaintances, whom we will learn to love and cherish.
    Some people on the train will leave an everlasting impression when they get off. Some will get on and get off the train so quickly, they will scarcely leave a sign they ever travelled along with you or ever crossed your path.
    We will sometimes be upset that some passengers, whom we love, will choose to sit in another compartment and leave us to travel on our own. Then again, there is nothing saying we cannot seek them out anyway. Nevertheless, once sought out and found, we may not even be able to sit next to them because the seat may already be taken.
    That is okay, everyone’s journey will be filled with hopes, dreams, challenges, setback, and goodbyes. We must strive to make the best of it, no matter what. We must constantly strive to understand our travel companions and look for the best in everyone.
    Remember, at any moment during our journey, any one of our travel companions can have a weak moment and be in need of our help. We too may vacillate or hesitate, even trip, hopefully we can count on someone being there to be supportive and understanding.
    The bigger mystery of our journey is we do not know when our last stop will come. Neither do we know when our travel companions will make their last stop. Not even those sitting on the seat next to us.
    We are all on this train ride together. Above all, we should all try to strive to make the ride as pleasant and memorable as we can, right up until the final stop and leave the train for the last time. All aboard! Safe journey!
