Mad Men Returning in April

You all know how I love Mad Men the TV Series

There will be a 2 hour premier on April 7th

I cannot wait an early birthday present for me (April 8th)

My cousin Wendy's fabulous recipe for corn potato chowder

As requested, here is the recipe:

I actually combined a couple of recipes and this turned out great!

Potato/corn chowder

6-8 strips of bacon

1 whole onion, chopped

2-3 celery stalks, cut in 1/4 inch pieces

2 whole carrots, peeled and cut in slices

2 large potatoes, peeled, cut in 1/4 inch cubes

salt & pepper & dill weed to taste

1 can creamed corn

1 can whole corn (I like using the bicolor-mixed white & yellow sweet corn)

1 1/2 cups water (I was wondering if we could have used low sodium chicken broth?, didn't try it. .. might work out well & add more flavor? I didn't want to take away from the corn flavor... if anyone tries it, let me know how it works out)

1 1/2 cups milk (I used the 2% that we always have in the fridge)

2 Tbsp flour

Cut the bacon in 1 inch pieces and fry until crisp-save the bacon fat (should be at least 1 Tbsp)

set aside the bacon as garnish for soup when serving (I put it in the fridge & reheated it 30 seconds in the microwave)

Saute' the onion, celery, carrot & potatoes in the 1-2 Tbsp of remaining bacon fat, low heat until

the potatoes are soft, approx. 15 minutes. I also drained the juice from the can of whole corn to do this, the bacon fat wasn't enough liquid

Add both cans of corn, the water & the milk (reserve some of the milk, approx. 1/4 cup to whisk in the 2 Tbsp of flour, add to the soup to thicken a bit; the stock still doesn't really get that thick)

Heat to allow little bubbles around the edges of the pot, but try not to boil

Garnish with bacon

I served this soup with some rye rolls and a spinach salad

(could fry up a bit of extra bacon to add as garnish for the spinach salad too!)
Good on a cold winter day!
