A Butterfly’s Lesson

”One day, a small oppening appeared on a cocoon; a man sat and watched
for the butterfly for several hours as it struggled to force its body
through that little hole....

Then, it seemed to stop making any progress.
It appeared as if it had gotten as far as it could and it could not go
any further. So the man decided to help the butterfly: he took a pair of
scissors and opened the cocoon. The butterfly then emerged easily.

But it had a withered body, it was tiny and shrivelled wings. The man
continued to watch because he expected that, at any moment, the wings
would open, enlarge and expand, to be able to support the butterfly’s
body, and become firm.

Neither happened!
In fact, the butterfly spent the rest of its life crawling around with a
withered body and shrivelled wings. It never was able to fly.

What the man, in his kindness and his goodwill, did not understand was
that the restricting cocoon and the struggle required for the butterfly
to get through the tiny opening, were God’s way of forcing fluid from
the body of the butterfly into its wings, so that it would be ready for
flight once it achieved its freedom from the cocoon.

Sometimes, struggles are exactly what we need in our life.
If God allowed us to go through our life without any obstacles, it
would cripple us. We would not be as strong as we could have been. Never
be able to fly.

I asked for Strength...
And God gave me difficulties to make me strong.
I asked for Wisdom...
And God gave me Problems to solve.
I asked for Prosperity...
And God gave me a Brain and Brawn to work.
I asked for Courage…..
And God gave me obstacles to overcome.
I asked for Love...
And God gave me Troubled people to help.
I asked for Favors...
And God gave me Opportunities.

Chow Mein Oven Baked


Fall is on it's way and that's when comfort foods like this one come to mind.
It is also a great dish to make for company, once it's assembled you stick it in the oven and you have time to set a nice table!

  • 1 pound ground beef
  • 2 large stalks of celery, chopped
  • 1/2 cup green pepper, chopped
  • 1 onion, chopped (this is really good without the onion:)
  • 1/2 cup rice, uncooked
  • 1 1/4 cups boiling water
  • 1 can cream of chicken or mushroom soup
  • 1/2 cup mushrooms, chopped
  • 1/4 cup water chestnuts, drained and chopped
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon soy sauce
  • 1 1/2 cups chow mein noodles

  1. In a skillet over medium high heat, cook ground beef, celery, green pepper, and onion (if you choose to use it) until the ground beef is lightly browned. Drain excess grease.
  2. Add the rest of the ingredients except for the chow mein noodles.
  3. Pour into a greased 9 x 13" pan.
  4. Cover with foil and bake in a 350º oven for 60 minutes.
  5. Stir in half of the chow mein noodles and sprinkle the other half over the top.
  6. Serve immediately.

Two Frogs

Two Frogs

A group of frogs was traveling through the woods, and two of them fell into a deep pit. When they saw how deep the pit was, they told the two frogs that they were as good as dead. The two frogs ignored the comments and tried to jump up out of the pit with all their might. The other frogs kept telling them to stop, that they were as good as dead. Finally, one of the frogs took heed to what the other frogs were saying and gave up. He fell down and died. The other frog continued to jump as hard as he could. Once again, the crowd of frogs yelled at him to stop the pain and just die. He jumped even harder and finally made it out. When he got out, the other frogs said, "Did you not hear us?” The frog explained to them that he was deaf. He thought they were encouraging him the entire time.

This story teaches two lessons:

1. There is power of life and death in the tongue. An encouraging word to someone who is down can lift them up and help them make it through the day.

2. A destructive word to someone who is down can be what it takes to kill them.

Be careful of what you say. Speak life to those who cross your path. The power of words... it is sometimes hard to understand that an encouraging word can go such a long way. Anyone can speak words that tend to rob another of the spirit to continue in difficult times. Special is the individual who will take the time to encourage another.


Be careful of the words you speak keep them soft and sweet
For if you are not careful in the morning you will never know which ones you will have to eat.

Kindness is the highest form of wisdom

Soulful Sunday

Logan's first real mountain accent today with daddy! Mt. Samgak done and dusted, buddy. What's next?! Can't believe it took me two years to figure out that there's a trail to Bukhansan right from my apartment - danggit! — at Bukhansan National Park.


The best thing you can spend on your children is time.


People are wanting to find peace and happiness in life by trying to make the surface of their lives smooth, placid, and undisturbed. We seek pleasure, and avoid pain. We try to engineer some set of life circumstances that we imagine will being peace and happiness. We attend conferences and seminars, and read books, in hopes of finding some new and improved way of eliminating the waves and achieving a smooth, disturbance-free life. It is not going to  happen. Ever! There will be waves. That’s just what happens. That’s the way it is.

But here’s the good news. It’s not necessary to have a wave-less life to have peace and happiness.

A recipe shared with me from my cousin Brenda Thank you 

...GARLIC & LEMON CHICKEN W/GREEN BEANS & RED POTATOES!
(Gluten free, Low Carb, Diabetic Friendly and so simple to make)

(Please SHARE... so that it saves to your timeline. You can refer back to recipe later!).

INGREDIENTS
6 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 pound trimmed green beans
8 small red potatoes, quartered
4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)

DIRECTIONS
Preheat oven to 400°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.

In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken.

Roast for 50 minutes. Remove the chicken from the dish or skillet. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender. Place a chicken breast on each of 4 serving plates; divide the green beans and potatoes equally. Serve warm.

The Secret of Heaven and Hell

The old monk sat by the side of the road. With his eyes closed, his legs crossed and his hands folded in his lap, he sat. In deep meditation, he sat. Suddenly his zazen was interrupted by the harsh and demanding voice of a samurai warrior. "Old man! Teach me about heaven and hell!"

At first, as though he had not heard, there was no perceptible response from the monk. But gradually he began to open his eyes, the faintest hint of a smile playing around the corners of his mouth as the samurai stood there, waiting impatiently, growing more and more agitated with each passing second. "You wish to know the secrets of heaven and hell?" replied the monk at last. "You who are so unkempt. You whose hands and feet are covered with dirt. You whose hair is uncombed, whose breath is foul, whose sword is all rusty and...
neglected. You who are ugly and whose mother dresses you funny. You would ask me of heaven and hell?"

The samurai uttered a vile curse. He drew his sword and raised it high above his head. His face turned to crimson and the veins on his neck stood out in bold relief as he prepared to sever the monk's head from its shoulders.
 


 "That is hell," said the old monk gently, just as the sword began its descent.

In that fraction of a second, the samurai was overcome with amazement,awe, compassion and love for this gentle being who had dared to risk his very life to give him such a teaching. He stopped his sword in mid-flight and his eyes filled with grateful tears.
